Contrary, to my meal planning aversion I actually do enjoy cooking for my family each evening. I think eating dinner together as a family is an important ritual and that it is the key to keeping a busy family bonded together. However, at times as a working Mom it just feels impossible to get something healthy on the table. We have been trying really hard in our family to avoid eating out so I’ve turned to friends and family for quick meal ideas. My sister Marissa gave me the idea for this meal and my kids love it! I hope yours will too.
It really comes down to being prepared with these two items:
Jiffy Corn Bread mix (or any kind of cornbread mix you love) and Chili. I prefer Madras Lentils, you can find it at Costco, but really any kind of chili will do.
This is what you are going to make!
Corn Bread Waffles with Chili
While a bowl of chili with corn bread on the side will get eaten with only a few complaints, somehow the exact same corn bread mix cooked on a waffle iron instead with chili on top brings cheers. Who knew? My sister Marissa that’s who.
All you need to do is follow the instructions on the cornbread mix, there is no need to change it, and pour it right on the waffle iron, cook it for the same amount of time you would a normal waffle.
In the meantime heat up the chili and get whatever toppings you like ready. At our house we use:
Shredded Lettuce ( I’ve found that if the lettuce is cut up small it’s easier for the kids to eat and they enjoy it more)
Shredded Cheese
and
Sour Cream
Then just layer it all, waffle, chili and toppings.
It literally takes minutes from start to finish and your family will love it.
