Since we’re talking about some of our favorite grocery store finds this week, I thought I’d share my go to recipe for when company is coming, but I’m short on time.
I started making this years ago after reading a recipe in Southern Living Magazine. Over the years it has evolved, but it remains one of the easiest crowd pleasers I make. On top of that, it’s very budget friendly. This entire meal cost under $12, and it feeds my entire family. We have a lot of kids, but it would easily feed four adults.
If you take our advice and buy a rotisserie chicken at Costco, this whole thing will also take you about 15 minutes. Serve it with a salad and some rolls, and you’re done! It also reheats beautifully, making it a fantastic “drop off” dish.
Easy Weeknight Chicken
Ingredients:
- Rotisserie Chicken
- 1/4 c. butter
- 1 onion, sliced
- 8 oz sliced mushrooms
- 1/2 tsp dried thyme
- 1 tsp garlic salt
- 2 c. cream
- 1/4 c. sour cream
- pepper to taste
- 1 package egg noodles
Instructions:
- Melt butter in a large skillet.
- Add onions and cook over medium heat until translucent.
- Add mushrooms and cook for 3 minutes.
- Add thyme and salt.
- Mix cream and sour cream together, and slowly add to skillet. Stir.
- Add pepper to taste.
- Add chicken to skillet, cover until heated through, about ten minutes.
- Cook egg noodles according to package directions.
- Place noodles on a serving platter and top with sauce and chicken.
