With school starting soon (or already started, depending on where you live) everyone’s mornings are about to get a lot more rushed. School starts for us at 7:30, which means my kids are out the door by 7:00am. I’m a big believer in eating breakfast, but a lot of times I find myself trying to get everyone to hurry up, and breakfast is not the peaceful start to the day that I want it to be. There have also been mornings where we found out, as kids are walking out the door, that someone didn’t eat breakfast at all!
Today’s recipe will hopefully solve the last minute problem for you. You might think that cookies are a bad choice for breakfast, but if you look at the ingredients in a muffin, you will recognize that these cookies are a great choice! The dough for these cookies can be made ahead of time and frozen in individual portions. That way on a busy morning all you have to do is pop them in the oven for ten minutes.
These cookies have plenty of protein, and they’re delicious. This is actually an adaptation of a Better Homes and Gardens recipe that I used to make all the time in college. If you don’t fancy cookies for breakfast, they also make a perfect after school snack for when kids need a little pick me up while they’re doing homework!

Breakfast Cookies
Ingredients:
- 3/4 c. butter
- 1/2 c. peanut butter
- 1 c. white sugar
- 1/2 c. brown sugar
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 2 eggs
- 1 tsp vanilla
- 3/4 c. all purpose flour
- 1/2 c. whole wheat flour
- 2 c. rolled outs
- grated zest from 1 orange
- 1/2 c. chopped almonds
- 1/2 c. chocolate chips
- 1/2 c. dried cherries
- 1/2 c. chopped dried apples
Instructions:
- In a mixer, cream together butter, peanut butter and sugars.
- Add baking soda and baking powder and mix.
- Add eggs and vanilla; combine.
- Add in flour, and mix until combined.
- Mix in remaining ingredients.
- Use a cookie scoop or a tablespoon to form cookies on an ungreased cookie sheet.
- Bake at 375º for 10 minutes.
- Cool on a wire rack.
