Hey! Happy National Watermelon Day!
You know we’re a sucker for made up holidays – and this one is no exception!
The only thing keeping the summer spirit alive over here is an abundance of popsicles. I may or may not have frozen some food coloring and water the other day and called it good. Any liquid is fair game in this house!
After styling an Aguas Frescas bar for our friend Tori last week (check it out here) I had 4 gallons of watermelon and grapefruit agues frescos left. IF you aren’t familiar with Aguas Frescas – it’s a fruit infused water with just a touch of sweetener… sugar, honey and agave all make the cut. It’s lighter than a fruit juice and definitely less sweet.
And let me just say – it makes an INCREDIBLE popsicle. Juicy and sweet but not syrupy or overwhelming. Since I had some left over fruit, I dropped some bite size pieces in the popsicle molds before pouring in the liquid. It’s pretty darn good.
The simple syrup I used for the mixtures is infused with mint and basil (separately… not in the same batch) – so I dropped a crushed leaf or two in the molds as well. The aromatic extra that hits your nose is incredible – even Vivi liked the “tickle” of the basil in her popsicle and the “sniff” of mint.
The grapefruit froze to the most lovely peachy-white and is bitter and sweet. So good.
Agua Fresca is an incredibly easy summer (or any time!) treat to make. Here’s one of our recipes for Watermelon and here are some others – as well as a few other popsicle recipes I’m excited to try:

Want to kick these up a notch? Serve in a frosty glass of your favorite bubbly! Prosecco or Topo Chico would both be lovely!
