Since we’re talking Summer Staples this week, I thought I’d share one of my favorite Summer cooking tricks: The Slow Cooker! I know most people think of warm comfort food when they think of the slow cooker, but the slow cooker (or Crock Pot, if you prefer) is perfect for hot Summer days when you don’t want to heat up your kitchen.

You can make a batch of shredded chicken on Monday for tacos, and then use it again for a chicken salad, nachos, pasta, or you can freeze it to use another day. You’re only limited by the size of your appliance. this 6 qt. Slow Cooker, and I easily make enough chicken to feed my family three separate meals.

Even though Summer is supposed to be kick back and relaxing, it’s also filled with soccer and swim team practice. If you’re anything like us, you’re probably not spending all day at home, and dinner might be the last thing on your mind. Having dinner ready to go in advance means a lot fewer trips to the drive thru!

For this meal, we served the chicken in street tacos. If you have the chicken ready to go, you only need to pick up some tortillas, cheese and salsa, and you’re set. We use HEB’s combination corn/flour tortillas, which were just the right size for street tacos. We also added Adam’s Reserve Lopez Family Rub. If you don’t want to add the seasoning to the crock pot, you can just add it when you’re making the tacos. The flavor isn’t overwhelming, and it would also be perfect in a salad. Slow Cooker Shredded Chicken | Handmade Mood

Shredded chicken in the slow cooker requires almost no effort, but it tastes delicious every time! What’s your favorite thing to cook in the slow cooker?

Shredded Chicken in the Slow Cooker

Ingredients:

  • 10 boneless skinless chicken thighs
  • 2 large onions, sliced
  • 1 c. chicken stock
  • 2 Tbsp. Adam’s Reserve Lopez Family Rub (or other Mexican seasoning)

Instructions:

  1. Coat the bowl of the slow cooker with cooking spray.
  2. Line the bottom of the slow cooker with the onions.
  3. Add the chicken thighs.
  4. Top the chicken thighs with the seasoning and the chicken stock.
  5. Cook on high for 4 hours, or low for 8 hours.
  6. When the chicken is done cooking it will come apart easily with two forks.
