Lime Cookies with Coconut Frosting | Handmade Mood

Am I the only one who sings a little Harry Nilsson when I see lime and coconut together, right? I mean, you’re singing it right now, aren’t you?! The great thing about cookies and Summertime (or really any time), is that you can make the dough, separate it into the balls, and put them in the freezer until you’re ready to bake.

Frozen cookie dough | Handmade Mood

I had a college roommate who’s mother was a home ec teacher, and every time she went home she’d come back with a bag of frozen cookie dough balls. Now, whenever I make cookies I prepare a triple batch and just keep 2/3 in the freezer. This keeps me from eating 100 cookies in a single sitting, and it also makes me seem extra prepared when people show up unexpectedly (hostess with the almost mostess right here)! Also, if you’re only making a couple of cookies, you can bake them in the toaster oven and not heat up your entire kitchen.

Lime COokies with Coconut Frosting | Handmade Mood

These cookies are great on their own, but if you want to take it up a notch, you can add this  coconut frosting. These cookies will definitely be making appearance at your house with a cup of milk this Summer!

Lime Sugar Cookies

Ingredients:

  • 2 1/2 c. all purpose flour
  • 1/2 tsp. baking soda
  • 1 tsp baking powder
  • 1/2 tsp. salt
  • 1 1/2 c. sugar
  • zest and juice from 1 lime
  • 1 stick butter, melted
  • 1/3 c. vegetable oil
  • 1 egg
  • 1 Tbsp milk

Instructions:

  1. Whisk together dry ingredients.
  2. Add remaining ingredients and mix together.
  3. Use a cookie scoop to divide dough into balls.
  4. Roll balls in sugar and place on a cookie sheet
  5. Bake in a 350º oven for 10-12 minutes.
  6. After the cookies are cool, you can top with Coconut frosting.
